I love summer time, it means grilling and sitting by the pool (OK, kiddy pool) while the little ones splash each other! The guys are standing around the grill talking baseball and the women are watching the kids and catching up on the latest gossip. Grilling means almost limitless dinner options! I am a big fan of a simple chicken salad. I do a chicken marinade in a white wine concoction (we’ll get to that in just a minute!) then put it over a delicious salad filled with fresh fruit. It really screams SUMMER IMHO. Not a salad person? Try putting it in tacos, or just eating it by itself with whatever side suits you! This marinade is so versatile, the chicken could go with so many meals!
So let’s jump right into the good stuff! The marinade is only 5 ingredients making it SUPER simple! This is a white wine marinade, so obviously get a white… but for THIS marinade in particular, you really want to go with a DRY white wine. The orange and honey will add some sweetness to it, so getting a sweet white would be overpowering. A dry wine like a sauvignon blanc or an unoaked chardonnay will do great. The other ingredients are an orange, honey, garlic and rosemary. The acidity in the wine and orange will balance the sweetness of the honey. The garlic and rosemary just add a nice pop of flavor. Random thought: am I the only one obsessed with the smell of fresh rosemary?! I seriously love it… it makes me happy. Who knows, maybe I have some happy childhood memory lingering way back in my subconscious. It is easily my favorite herb… But I digress. Back to the recipe!
I let the chicken marinate for at least 4 hours. Overnight or all day will give it more kick, so if you have the time, marinate it far enough in advance. Now, raw chicken grosses me out and I was really debating on even putting this picture in… but again, rosemary 🙂
After your chicken marinade has been soaking an appropriate amount of time, just throw it on the grill! Or have your other half do it (as in my case).
These chicken breasts were pretty big, so they took probably 12 minutes on each side. But PLEASE don’t quote me on that! Again, Hubby is the Grill-Master in our house! I put 1 sprig of rosemary on each chicken breast while they were grilling (I’m beginning to think I may have a problem) just for that teeny extra bit of flavor. Once they’re cooked through, let them rest for a minute before cutting them up.
Now for the salad, I just wanted something simple. Strawberries and blackberries are in season now, so they seemed like the obvious choice. For wine pairing, I went with the same wine I used to marinate the chicken. The flavors will be complimentary, so I don’t see how you could go wrong.

- 4 chicken breasts
- 1 C dry white wine
- 2 TBSP honey
- 4 sprigs fresh rosemary
- 2 cloves garlic (minced)
- 1 large juiced orange (about 1/2-3/4 C)
- Add all ingredients to ziplock bag
- Marinate minimum of 4 hours
- Take chicken out of bag
- Discard marinade
- Grill until cooked through
