Technically these are tropical champagne popsicles, but ‘Tropical Popsicle’ is just so much more fun to say! Seriously, say it 5 times fast. Go ahead, I’ll wait 🙂 You smiled, didn’t you?!
So what are your plans for this holiday weekend? With 3 kids 3 and under, we’re not braving the heat (heat index up to 107 here in Texas) or agreeing to late late bedtimes just to see fireworks. I can’t wait for the year we can do the 4th of July as a family! I love fireworks. Like looove them. Even so, we still want to do something special on the 4th, so we’re doing some grilling and hanging out with my friend Serene and her family. (Serene happens to be blogger extraordinaire over at House of Yumm and my very own Blogging Yoda!!) They conveniently also have small kids, so they get it. Know what I mean?! To make our get-together even more fun, I’m making these adult tropical popsicles! Champagne for the adults and ginger ale for the kiddos (make sure not to mix them up LOL).
I love these Popsicle molds by Koji and sold at Target. They make filling the popsicles so easy with the stand, and it catches spillover so it won’t make a huge mess in your freezer. Win-win!
The actual popsicles couldn’t be easier with only 4 ingredients: Champagne (or ginger ale), coconut water, strawberries and canned pineapple! I say canned pineapple specifically because I used some of the pineapple juice to give it that extra tropical kick!
They freeze so lovely and almost resemble layers because of the different weights of the fruit! WHO KNEW?! (I totally did not plan that!)
These popsicles are a perfect summer treat! I especially love making the virgin batch for the kiddos. It sounds so silly, but I love watching my kids play outside eating popsicles. We practically have to hose them down after, but there is something nostalgic in seeing their sweet, smiling, popsicle covered faces 🙂
- 1 1/2 C champagne (or ginger ale)
- 1 1/2 C coconut water
- 1/2 C chopped strawberries
- 1/2 C canned pineapple
- 2 TBSP canned pineapple juice
- Add coconut water, fruit and fruit juice to blender
- Blend well
- In a large bowl, combine blended ingredients and champagne
- Stir gently
- Pour into 6 popsicle molds
- Freeze 6 hours
